It's gotta be a vote for the Behringer BCR2000 from me. It's absolutely killer, and dirt cheap. I have a since bought a Faderfox LV1 and Novation remote SL25 as well, but it is the BCR which more often than not is the most useful for me. It has loads of buttons and endless rotary faders, and it's really easy and quick to configure. It also switches between presets at lightning fast speed, so you can quickly and easily set it up to control 100s of parameters (if you'd want to) across different presets and access them at the touch of a button. So yeah, unless you want something with keys, it should be pretty high on your list right now.

m-audio's trigger finger is pretty fun. usually $200 new. essential if you want more realistic drum programming.

for lots of utility faders and knobs m-audio's uc33 is also pretty cheap and does the job. no endless rotaries though.

i've used both in ableton on my powerbook and have had no problems.

All the evolution stuff is cheap and should work good for you. Just take it easy on those knobs, they can only take so much. Ask Lee Curtiss, he busted knob number 1 on my UC-16.
