I'm happy of my IBM, while still single core (1.86 Ghz Pentium M w/1.5 Gb RAM with an RME Multiface II) suits my needs, with the internal 5400 RPM HD I can record 16 tracks at the same time w/reverbs and stuff w/o glitches or dropouts whatsoever -I guess the soundcard plays a role here too-
a friend of mine got an IBM w/dual core and it's just insane, you can do so much stuff w/dual core.
That said, I'm still fine with my 8 months old single core, but I wouldn't buy a single core now.

If you use ableton live, read this post:
http://www.ableton.com/forum/viewtopic.php?t=24715

it's the live 5 performance test, should give you an idea of how different laptops or desktops perform with live.
As you can see PC are still way better that mac (for live only i guess) but that does not mean mac are crap, live just runs better on window.
