I think it could be worth going to Primrose Hill or Greenwich Observatory during sunset to get a look at the London Skyline and the city lights switching on. It will be less crowded then the London eye and will last much longer.
There are absolutely loads of excellent museums or galleries to go to, but any guidebook will have a full list. If you have an interest in war then the imperial war muesum is amazing. You can spend 8 hours wondering around and still not see everything.
