yeah well I do a little bit of both... depends on the purpose.
let´s say for example that you want to compress the bass and the kick together. then it´s easy to just send the two tracks to the same return channel. (using "audio to" "sends only") the result is a bit different from when you use two different compressors on each channel.

yah I usually start from scratch too... the only thing I sometimes save as a template is one track with a drum rack, saturator and utility. Then on the master track I have an external audio effect that sends the signal through my external mastering chain.
