I always start a track with the atmospheres. I find I pay much less attention to the other sounds because its slightly masked by something. Not to say I don't listen to each sound in isolation for critial listening and tweaking. I used to spend ages just making kicks and getting bread n butter beats...

the phatty should show up as a USB midi device, so you shouldn't need midi cables. But u will need to select the Slim Phatty on the output of your midi track.
