In terms of sounds, I always think it's pointless to chase a sound you hear a lot on records. By the time you figure out how to make it well, the scene has moved on and you will sound dated and cliched. When you hear a good sound, admire it but strive to create your own good sounds.

You mentioned EP's earlier...I haven't found anything better than Lounge Lizard for those. Some of the acoustic modelling VST's around now are seriously good. I'm glad they are about instead of software trying its bollox off to emulate analogue gear all the time. These acoustic modelling synths bring out what is powerful about software, Things like Chromaphone, Lounge Lizard and actually Collision are great at coming up with pseudo realistic sounds and then adding some crazy ass modulation to take them into something else.
