its a question to what the labels or producers use or how they work(ed).
Old records were mainly recorded directly thru tapes and went directly to the mastering, cuting suite and pressing plant. The only way to get such kind of material into the digital domain is to rip it via the common way: via a turntable equiped with an apropriate system for that purpose.
If you have an artist who recorded into a digital domain (DAT, ADAT or directly onto harddrives), you are able to get reproducible material. DAT and ADAT had some problems.
Or you are able to create a CD with your recording system.
Since the most artists produce or record digitally it is easier to get a similar sounding file.
